Ingredients

2 cups cooked chicken, shredded

1 cup plain yogurt

2 tablespoons tikka masala paste

1 tablespoon fresh lemon juice

1 teaspoon garam masala

Salt and pepper, to taste

4 mini naan breads (or 8 halves of larger naan)

1 cup cucumber, diced

1 cup ripe tomato, diced

1/2 cup red onion, finely chopped

Fresh cilantro, for garnish

1/2 cup shredded mozzarella cheese (optional)

Lime wedges, for serving

Instructions

Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken, plain yogurt, tikka masala paste, fresh lemon juice, garam masala, salt, and pepper. Mix thoroughly until the chicken is completely coated in the marinade. Cover the bowl and let the mixture marinate in the refrigerator for at least 30 minutes, or up to 12 hours for deeper flavor.

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the perfect temperature once you’re ready to bake.

Shape Naan Cups: If you are using whole mini naan breads, slice each one in half to create cups. For larger naan, cut them into small squares. Place the naan on a baking sheet; if you prefer a more cup-like shape, gently press them into a muffin tin.

Assemble the Naan Cups: Generously spoon the marinated chicken mixture into each naan cup—don’t be shy! If you’re using mozzarella cheese, sprinkle some on top for a deliciously melty layer.

Bake the Naan Cups: Carefully place the baking sheet in the preheated oven and bake for about 10-12 minutes, until the naan is golden brown and crisp, and the chicken is thoroughly heated.

Prepare the Toppings: While the naan cups are baking, prepare a fresh topping. In a separate bowl, combine the diced cucumber, diced tomato, and finely chopped red onion. Season with a pinch of salt and a squeeze of lime juice for a refreshing burst of flavor.

Serve: When the naan cups are out of the oven, let them cool for a couple of minutes. Top each cup with a spoonful of the cucumber-tomato mixture and garnish with a sprinkle of fresh cilantro for a beautiful touch.

Enjoy: Serve the Mini Chicken Tikka Naan Cups warm, with lime wedges on the side to add a zesty twist as you dig in!
