Ingredients

4 large flour tortillas

8 oz cooked turkey bacon, chopped into small pieces

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked black beans, drained and rinsed

1 medium avocado, sliced

1/4 cup fresh cilantro, finely chopped

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Sour cream (for serving)

Salsa (for serving)

Instructions

Prepare the Ingredients: Begin by chopping the cooked turkey bacon into small, manageable pieces. Slice the avocado and set both the avocado slices and chopped cilantro aside for later assembly.

Heat the Tortillas: In a large skillet, warm the olive oil over medium heat. Place one flour tortilla in the skillet, allowing it to warm slightly. On one half of the tortilla, sprinkle a generous layer of shredded cheddar and Monterey Jack cheese. Next, layer on the chopped turkey bacon, followed by the cooked black beans. Season this layer with a pinch of smoked paprika, garlic powder, and onion powder to enhance the flavor.

Build the Stack: Carefully fold the tortilla in half to create a half-moon shape. Cook the quesadilla for approximately 2-3 minutes on each side, or until it’s golden brown and the cheeses are perfectly melted. Remove the cooked quesadilla from the skillet and cut it into quarters. Repeat this process with the remaining tortillas, using additional ingredients as desired for extra flavor and texture.

Assemble the Stacks: On a serving plate, begin stacking the quarters of the quesadilla vertically on top of each other to create mini stacks. You can stack two to three quarters per stack, depending on your preference. Top each mini stack with a few slices of avocado and a sprinkle of fresh cilantro for a vibrant finish.

Serve: Present your delicious mini quesadilla stacks while they are still warm. Serve them alongside a small bowl of sour cream and salsa for dipping. These bites are perfect for sharing and are sure to be a hit with family and friends!
