4 medium zucchinis

1 pound ground turkey

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

Salt and pepper to taste

1 cup shredded cheddar cheese

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). To make cleanup easier, line a baking dish with parchment paper.

    Prepare the Zucchini: Slice each zucchini in half lengthwise. Use a spoon to carefully scoop out the insides, leaving a thick wall to form boats. Finely chop the scooped zucchini flesh and set it aside for later use.

      Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic. Sauté for about 3-4 minutes, stirring occasionally, until the onion is translucent and fragrant.

        Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a spatula as it cooks, until it's no longer pink, approximately 5-6 minutes.
