Ingredients

1 medium head of cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 cup red cabbage, thinly sliced

1 ripe avocado, sliced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

For the Lime Crema:

1/2 cup sour cream or Greek yogurt

Zest and juice of 1 lime

1 clove garlic, minced

Salt, to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it’s hot enough for roasting the cauliflower.

Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, ground cumin, garlic powder, onion powder, and a generous pinch of salt and pepper. Toss the florets until they are evenly coated in the seasoning mixture.

Roast the Cauliflower: Spread the seasoned cauliflower florets in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the florets are golden brown and tender. Be sure to flip the cauliflower halfway through cooking for even roasting.

Make the Lime Crema: While the cauliflower is roasting, prepare the creamy lime sauce. In a small bowl, mix together the sour cream (or Greek yogurt), lime zest, lime juice, minced garlic, and a sprinkle of salt. Adjust the seasoning by tasting and adding more salt if desired. Set the lime crema aside.

Warm the Tortillas: As the cauliflower nears completion, warm the tortillas in a skillet over medium heat for about 30 seconds on each side, or until they are soft and pliable. Alternatively, wrap them in foil and place them in the oven during the last 5 minutes of roasting the cauliflower.

Assemble the Tacos: To assemble each taco, take a warmed tortilla and fill it generously with the roasted cauliflower. Top with a handful of sliced red cabbage and avocado slices, then drizzle with the prepared lime crema.

Garnish and Serve: Finish your tacos with a sprinkle of fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
