1 teaspoon dried oregano

1 teaspoon garlic powder

4 whole wheat pita breads, cut in half

8 ounces fresh mozzarella cheese, sliced

1 cup fresh basil leaves, roughly chopped

Balsamic glaze, for drizzling (optional but recommended)

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's ready for roasting.

    Prepare the Tomatoes: On a large baking sheet, spread the sliced tomatoes in a single layer. Drizzle them with the extra virgin olive oil, then season generously with salt, black pepper, dried oregano, and garlic powder. Use your hands or a spatula to gently toss the tomatoes, ensuring they're evenly coated with the olive oil and seasonings.
