For the Tomato Layer:

1 cup sun-dried tomatoes, chopped

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk

2 large eggs

1/4 cup olive oil

1 tablespoon fresh basil, finely chopped

For the Spinach Layer:

1 cup fresh spinach, chopped

1 cup all-purpose flour

1/2 cup feta cheese, crumbled

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk

2 large eggs

1/4 cup olive oil

1 tablespoon fresh dill, finely chopped

For the Mozzarella Layer:

1 cup shredded mozzarella cheese

1 cup all-purpose flour

1/2 cup goat cheese, crumbled

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk

2 large eggs

1/4 cup olive oil

1 tablespoon fresh oregano, finely chopped

For Assembly:

1/4 cup olive oil (for greasing)

Fresh herbs for garnish (basil, dill, oregano)

Prepare the Oven and Pans:

    Preheat your oven to 350°F (175°C). Generously grease three 9-inch round cake pans with olive oil and line the bottoms with parchment paper to prevent sticking.

      Make the Tomato Layer:

        In a mixing bowl, whisk together the flour, baking powder, and salt until well blended. In a separate bowl, whisk the milk, eggs, and olive oil together until smooth. Gradually add the wet ingredients to the dry mixture, stirring just until combined. Gently fold in the chopped sun-dried tomatoes and basil. Carefully pour the batter into the first prepared cake pan, ensuring an even layer.

          Bake the Tomato Layer:

            Place the pan in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the layer to cool in the pan for 10 minutes before gently transferring it to a wire rack to cool completely.

              Repeat for Spinach Layer:

                While the tomato layer cools, repeat the same process for the spinach layer. In a bowl, combine the flour, baking powder, and salt. In a separate bowl, whisk together the milk, eggs, and olive oil, then fold in the chopped spinach and crumbled feta cheese. Pour the mixture into the second prepared cake pan and bake in the oven for 20-25 minutes. Once done, let it cool similarly to the tomato layer.

                  Prepare the Mozzarella Layer:

                    For the mozzarella layer, repeat the mixing process. Combine the flour, baking powder, and salt, then whisk the wet ingredients separately. Fold in the shredded mozzarella and goat cheese. Pour the mixture into the third prepared pan and bake as before. Once all layers have cooled, remove them from their pans.

                      Layer the Cake:

                        On a serving platter, place the cooled tomato layer as the base. Drizzle a thin layer of olive oil on top, then carefully position the spinach layer atop the tomato layer, adding another drizzle of olive oil. Finally, place the mozzarella layer on top to complete the tri-layered structure.

                          Garnish and Serve:

                            For a finishing touch, drizzle a bit more olive oil over the entire cake and garnish generously with fresh herbs such as basil, dill, and oregano. Slice the cake and serve it warm or at room temperature for optimal taste.
