Ingredients

1 sheet of puff pastry (thawed if frozen)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 small onion, finely chopped

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon black pepper

1 egg (for egg wash)

Salt to taste

Sesame seeds (optional, for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Sauté Vegetables: In a skillet, add the olive oil and heat it over medium heat. Once hot, toss in the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion turns translucent. Next, add the chopped spinach and continue to cook for an additional 2-3 minutes, or until the spinach has wilted. Once done, remove from heat and set aside to cool slightly.

Prepare Filling: In a large mixing bowl, combine the sautéed spinach and onion mixture with crumbled feta cheese, ricotta cheese, grated Parmesan cheese, dried oregano, black pepper, and a pinch of salt. Stir the mixture thoroughly until all ingredients are well incorporated.

Roll Out Puff Pastry: Lightly flour your work surface to prevent sticking. Roll out the thawed puff pastry sheet to create a smooth and even surface. Using a sharp knife or pizza cutter, cut the pastry into rectangles measuring approximately 4x6 inches.

Fill the Pastry: Take a generous tablespoon of the spinach and feta filling and place it in the center of each pastry rectangle. Ensure you leave about 1 inch of space around the edges to allow for sealing.

Seal the Rolls: Carefully fold the pastry over the filling to form a roll. Press the edges together firmly to seal the filling inside. For a secure closure, use a fork to crimp the edges, creating a decorative finish.

Egg Wash: In a small bowl, beat the egg until well blended. Use a pastry brush to apply the egg wash over the top of each roll, giving them a beautiful golden color as they bake. If you like, sprinkle sesame seeds on top for added texture and flavor.

Bake: Arrange the prepared rolls on the lined baking sheet with some space between them. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and noticeably puffed.

Serve: Once baked, remove the rolls from the oven and let them cool for a few minutes. Serve them warm as a delightful appetizer or a delicious snack!
