Ingredients

1 cup smooth almond butter

1/4 cup honey or maple syrup (your choice)

1 teaspoon pure vanilla extract

2 cups rolled oats

1/2 cup puffed rice cereal

1/2 cup unsweetened coconut flakes

1/2 cup dark chocolate chips (use dairy-free if preferred)

1/4 teaspoon sea salt

Optional: 1/2 cup chopped nuts (such as almonds or walnuts) for added crunch

Instructions

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, allowing some excess paper to hang over the edges. This will make removing the squares easier when set. Set the dish aside.

Mix the Wet Ingredients: In a medium mixing bowl, add the almond butter, honey (or maple syrup), and vanilla extract. Use a whisk or spatula to blend the ingredients until they are completely smooth and well-combined.

Combine Dry Ingredients: In a larger bowl, mix together the rolled oats, puffed rice cereal, coconut flakes, sea salt, and optionally, the chopped nuts. Ensure these dry ingredients are well incorporated.

Combine Wet and Dry Ingredients: Pour the wet almond butter mixture into the bowl containing the dry ingredients. Gently fold everything together with a spatula until all dry components are thoroughly coated with the wet mixture.

Add Chocolate Chips: Carefully fold in the dark chocolate chips until they are evenly distributed within the mixture, ensuring every bite has a touch of chocolate.

Press Mixture into Pan: Transfer the combined mixture into the prepared baking dish. Using the back of a spatula or your hands, firmly press the mixture into an even layer across the bottom of the pan. Aim for a compact texture for better slicing later.

Chill: Place the baking dish in the refrigerator and let it chill for at least 2 hours, or until the mixture has firmed up significantly.

Slice the Squares: Once chilled, lift the mixture out of the pan using the overhanging parchment paper. Carefully cut into 16 equal squares with a sharp knife to achieve clean edges.

Store: Keep the sweet almond butter squares in an airtight container in the refrigerator, where they can last for up to one week. Alternatively, you can freeze them for longer storage, just be sure to separate layers with parchment paper to prevent sticking.
