1 pound smoked sausage, sliced into ½-inch rounds (choose kielbasa, andouille, or your favorite variety)

2 cups Brussels sprouts, halved (trimmed)

1 cup baby carrots, halved lengthwise

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium red onion, cut into wedges

3 cloves garlic, minced

3 tablespoons olive oil (divided)

⅓ cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it’s hot enough for even roasting.

    Prepare the Sheet Pan: Line a large baking sheet with aluminum foil or parchment paper. This will make for an easy cleanup after cooking.

      Combine the Veggies: In a large mixing bowl, add the halved Brussels sprouts, baby carrots, diced red and yellow bell peppers, red onion wedges, and minced garlic.

        Dress the Veggies: Drizzle 2 tablespoons of olive oil over the vegetables. Season generously with salt and freshly cracked black pepper. Toss the mixture thoroughly until all veggies are evenly coated in oil and seasoning, then spread them out in an even layer on the prepared sheet pan.

          Add the Sausage: Evenly distribute the sliced smoked sausage over the bed of seasoned vegetables, ensuring good coverage for maximum flavor.
