For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

2 ripe mangoes, diced, plus an additional mango for salsa

2 tablespoons olive oil

2 tablespoons honey

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (use more or less depending on your spice preference)

Salt and pepper to taste

For the Taco Assembly:

8 small corn or flour tortillas

1 cup red cabbage, finely sliced

1 avocado, sliced

½ cup fresh cilantro, roughly chopped

Lime wedges for serving

Optional: Your favorite hot sauce for an extra kick

For the Mango Salsa:

1 additional mango, diced

1 small red onion, finely diced

1 jalapeño, minced (adjust according to heat preference)

Juice of 1 lime

Salt and pepper to taste

Instructions

Marinate the Chicken:

    - In a medium-sized mixing bowl, whisk together the olive oil, honey, soy sauce, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until well combined.

      - Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.

        Prepare the Mango Salsa:

          - In another bowl, combine the diced mango, red onion, jalapeño, lime juice, and a pinch of salt and pepper. Mix thoroughly. Let the salsa sit for at least 15 minutes to allow the flavors to meld together.

            Cook the Chicken:

              - Preheat your grill or stovetop skillet to medium-high heat.

                - Remove the chicken thighs from the marinade, letting any excess drip off. Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). If using a skillet, add a tablespoon of olive oil to the pan before cooking the chicken to prevent sticking.

                  - Once cooked, remove the chicken from heat and rest for 5 minutes. After resting, slice the chicken into bite-sized pieces.

                    Warm the Tortillas:

                      - While the chicken is resting, warm the tortillas either on the grill or in a dry skillet set to medium heat for about 30 seconds on each side, until they become soft and pliable.

                        Assemble the Tacos:

                          - Take a warm tortilla and add a portion of the sliced chicken to the center. Top each with a handful of shredded red cabbage, a few slices of avocado, and a generous spoonful of the prepared mango salsa.

                            - Finish with a sprinkle of fresh cilantro and a squeeze of lime juice. If you enjoy a spicy kick, drizzle with your favorite hot sauce.

                              Serve:

                                - Serve the assembled tacos warm, accompanied by extra lime wedges and additional hot sauce on the side for those who like more heat. Enjoy your delicious Sweet & Spicy Mango Chicken Tacos!
