1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheese (a blend of cheddar and Monterey Jack is ideal)

1 medium red bell pepper, diced

1 small red onion, diced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Sour cream or Greek yogurt (for serving)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the rinsed black beans, corn, diced red bell pepper, diced red onion, ground cumin, chili powder, garlic powder, salt, and black pepper. Stir gently until all ingredients are evenly mixed and coated with the spices.

    Layer the Quesadillas: Lay one tortilla flat on a clean surface or a large cutting board. Spoon a generous portion of the bean and corn mixture onto one half of the tortilla, ensuring it doesn’t overflow. Sprinkle a layer of shredded cheese over the filling. Carefully fold the tortilla in half, covering the mixture completely. Repeat this layering process with the remaining tortillas and filling until all are prepared.

      Cook the Quesadillas: Heat a non-stick skillet or griddle over medium heat. Once the skillet is hot, place one folded quesadilla onto it.
