1 lb (450g) ground chicken

1/4 cup finely chopped red onion

1 clove garlic, minced

2 tbsp chipotle adobo sauce (from canned chipotles in adobo)

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded sharp cheddar cheese

12 slider buns

1/4 cup mayonnaise

1 tbsp lime juice

1/4 cup fresh cilantro, chopped (for garnish)

Optional toppings: sliced jalapeños, avocado slices, lettuce

Prepare the Chicken Mixture: In a large mixing bowl, combine the ground chicken, finely chopped red onion, minced garlic, chipotle adobo sauce, smoked paprika, cumin, salt, and black pepper. Using your hands or a spatula, mix the ingredients until they are well combined, being careful not to overmix the chicken to keep the patties tender.

    Form Sliders: Divide the seasoned chicken mixture into 12 equal portions. Shape each portion into a round slider patty, making a small indentation in the center of each patty. This will help prevent the sliders from puffing up during cooking.

      Cook the Sliders: Heat a large skillet or griddle over medium heat and lightly grease it with cooking spray or a drizzle of olive oil. Place the patties on the skillet and cook for about 5-6 minutes on each side, until they are golden brown and reach an internal temperature of 165°F (74°C).
