1 cup of your favorite salsa

1 cup uncooked brown rice

2 cups chicken broth (or water)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 tsp ground cumin

1 tsp chili powder

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce

1/2 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts generously on both sides with salt, pepper, ground cumin, and chili powder. Heat a splash of olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the seasoned chicken breasts. Sear them for approximately 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F.

    Add Salsa: With the chicken cooked through, pour your salsa over the top. Reduce the heat to a gentle simmer and allow the chicken to cook in the salsa for an additional 5 minutes, which will help meld the flavors beautifully. Remove the skillet from heat and let the chicken rest for a few minutes before shredding it using two forks.

      Cook the Rice: In a medium saucepan, combine 1 cup of uncooked brown rice with 2 cups of chicken broth (or water). Bring the mixture to a boil over high heat. Once boiling, lower the heat to a gentle simmer, cover, and allow it to cook for about 40-45 minutes, or until the rice is tender and all the liquid has been absorbed. Once done, fluff the rice with a fork and set it aside.
